Quick Cod Stew with Dill, Tomato and Scallions


Time: 10 minutes
Makes: one serving; you’ll have enough to make twice
INGREDIENTS  
1 green onion
3 oz cod
3⁄4 tsp butter
1⁄2 tsp minced ginger
1⁄2 cup vegetable broth
1⁄3 cup diced tomatoes
2 1⁄4 tsp dill
1⁄8 lemon


DIRECTIONS
1. Thinly slice green onion. Sprinkle cod with salt and
pepper.
2. In a pot, heat butter over medium-high. Add ginger and
green onion; cook 1 minute. Add broth and diced
tomatoes. Bring to a boil.
3. Add cod, cover and reduce heat to low. Cook 4 to 6 min,
until cod is opaque and breaks apart easily with a fork.
4. Meanwhile, coarsely chop dill. When fish is ready, stir dill
into soup, along with salt and pepper to taste. Drizzle
with a lemon wedge and enjoy.
