Italian Antipasto Salad with Roasted Red Pepper



INGREDIENTS
2 tbsp cherry tomatoes
1⁄2 cup arugula
1 1⁄2 tbsp black olives
2 tbsp roasted red peppers 1 oz mozzarella

3⁄4 tsp olive oil
3⁄4 tsp red wine vinegar 1 whole-grain roll


DIRECTIONS

1. Slice cherry tomatoes in half and place in a large bowl with arugula. Top with black olivesroasted red peppers, and mozzarella.
2. For the vinaigrette, combine olive oil and red wine vinegar in a small bowl. Season with salt and pepper to taste.
3. Drizzle vinaigrette over salad. Enjoy with a toasted roll.
