Edamame Apple Salad with Almond Dressing



Time: 10 minutes 
Makes: one serving
INGREDIENTS
1⁄4 lime
1⁄2 tbsp almond butter
1⁄2 tsp apple cider vinegar 1 1⁄2 tsp applesauce
1⁄4 tsp red pepper flakes 1⁄2 apple
2 tbsp chopped cilantro
2 tbsp chopped basil
1⁄4 cup shredded carrot
1⁄4 cup edamame
3⁄4 cup lettuce



DIRECTIONS

1. Make the dressing: De-seed and juice lime. In a small bowl, combine almond butter, 1⁄4 tablespoon lime juice, apple cider vinegarapplesauce, and red pepper flakes. Stir to combine, thinning with water if needed to reach a sauce-like consistency. Set aside.
Prep the ingredients:
2. Peel, core, and thinly slice apple. Coarsely chop fresh cilantro and basil. Combine together in a bowl with carrot and edamame.
Assemble the salad:
3. Pour almond butter dressing over edamame mixture. Mix well to combine.
4. Divide lettuce onto plates. Top with edamame mixture.
