Makes: one serving
INGREDIENTS
2 1⁄4 tsp olive oil
2 1⁄4 tsp red wine vinegar
1⁄4 lemon
1⁄4 tsp dried oregano
1⁄2 cucumber
1⁄8 red onion
1⁄2 cup lettuce
1⁄4 cup cherry tomatoes
1 tbsp feta (optional)
2 1⁄4 tsp kalamata olives
DIRECTIONS
1. In a small bowl, mix olive oil, red wine vinegar , lemon
zest & juice, dried oregano, salt and pepper.
2. Thinly slice cucumber and onion. Coarsely chop lettuce.
Place all in the same bowl.
3. Halve cherry tomatoes and add to bowl.
4. Sprinkle feta and olives on top. Add vinaigrette and toss
