Chicken and Sweet Potato Tortilla Wrap



Time: 15 minutes 
Makes: one serving

INGREDIENTS  
1⁄2 sweet potato
1 whole grain wrap - 10" size
4 oz precooked chicken
pieces
1⁄8 butter lettuce head
(optional)
1⁄4 cup cherry tomatoes
1 tbsp mayonnaise
(optional)
1⁄2 tsp dijon mustard


DIRECTIONS
1. Peel and chop sweet potato into a 1/2-inch dice.
Transfer to a microwave-safe bowl and microwave on
high 2 minutes. Stir and test for softness, then microwave
2 minutes more, or until very soft. Set aside to cool.
2. Meanwhile, lay out wrap on a large plate. Shred
chicken. Tear butter lettuce into small pieces. Cut cherry
tomatoes in half.
3. Add mayonnaise and mustard to sweet potato and
mash thoroughly with a fork; season with salt to taste.
Spread in the center of wrap wrap. Layer chicken, butter
lettuce and cherry tomatoes on top, fold in the ends of
the wrap and roll up tightly.
