Caprese Portobello Caps 2



Time: 15 minutes 
Makes: one serving

INGREDIENTS  
1 portobello mushroom
1 tbsp olive oil
1 oz mozzarella
1⁄2 tomato
1 tbsp chopped basil


DIRECTIONS
1. Preheat oven broiler on high. Scrape out the stems and
gills of the portobello with a spoon. Rub mushrooms with
1⁄2 tbsp olive oil olive oil. Season well with salt and pepper.
2. Line a baking sheet with foil. Place portobello on the
prepared baking sheet and bake 5 minutes. Flip and
bake another 3 to 4 minutes.
3. Meanwhile, cut mozzarella into cubes. Slice tomato.
Thinly slice basil leaves. When mushrooms are done,
layer tomato and basil into each cup. Top with
mozzarella. Broil 2 minutes, until melted. Enjoy with a
knife and fork.
