Beef, Cheddar & Chive Meatballs with Side Salad 2


Time: 15 minutes 
Makes: one serving

INGREDIENTS  
1⁄2 tbsp chives
2 oz ground beef
2 tbsp shredded cheddar
cheese
1⁄2 tbsp olive oil
3⁄4 cup spinach
1⁄2 tsp balsamic vinegar


DIRECTIONS
1. Mince chives. In a large bowl, combine ground beef,
shredded cheddar and chives. Sprinkle with salt and
pepper, then mix well with your hands. Roll into 4 mini
meatballs.
2. Heat 1⁄4 tbsp olive oil olive oil in a nonstick skillet over medium
heat. Add meatballs and cook, turning occasionally, until
cooked through, about 6 minutes.
3. Toss spinach with remaining 1⁄4 tbsp olive oil olive oil and the
balsamic. Enjoy with meatballs.
